Why induction?

Induction hobs are not exactly new but tend to be less prominent in the catering industry, this could be due to the misconception that induction hobs are not hard-wearing compared to traditional gas rings and electric tops.

This is, of course, false.with induction hobs having incredibly hard-wearing ceramic tops — that can be damaged by sufficient force — these must meet minimum product safety specifications with many commercial grade ceramic tops

Ceramic hobs are incredibly easy to clean, simply wipe clean and your hob will sparkle.

Unlike open flamed gas or element-heating electric ranges, an induction system uses electromagnets to heat the pans placed on the ceramic cooking zones.

This means that once a pan is removed, the surface cools down quicker and protect your utensils from being damaged by excess heat.

Energy efficient, an induction hob will be able to cook much faster than a gas hob, reaching peak temperature much quicker and providing instant high power.

90% of the energy used to power the electromagnets is transferred in heat energy to the pan, this means you will use less electricity to cook the same dishes than a comparable electric stove.
