Hailing from Japan, Soba noodles are usually an inexpensive fast food found at railway stations, but have began to become a specialty in many expensive and inexpensive restaurants looking to offer the healthy eastern cuisine.

Now become more widely available in the United Kingdom, soba noodles offer a few distinct serving options beyond regular noodles, which make them a tasty utility treat for your menu.

An amazing, tasty and healthy street food option, when done well soba noodles is seeing a rise in high-end eateries. Why haven’t you added them to your menu yet?…

Soba is the Japanese name for buckwheat, with thin noodles being made from the buckwheat flour and are usually served chilled alongside a dipping sauce, or in a more traditional hot broth as a noodle soup.

100% gluten free, soba noodles are an exceptional coeliac-friendly option to add to your menu. Just check the ingredients list, as some noodles have wheat flour added.

Slurping noisily and eating with chopsticks is the common way to enjoy soba noodles, especially when served in a noodle soup. We aren’t quite confident enough to manage our noodles with chopsticks just yet!

Our simple teriyaki chicken soba noodles are a great introduction to one of the best Japanese dishes available.

Ingredients

  • 85g bundle soba or buckwheat noodles
  • sesame oil
  • teriyaki marinade
  • 8 mange tout
  • 1 small piece of broccoli
  • 1 small carrot
  • ½ red chilli
  • 1 tablespoon toasted sesame seeds
  • 1 large chicken breast
  • soy sauce

Method

  1. Cook the noodles in boiling water for around 11 minutes
  2. Marinade the chicken with a thick layer of teriyaki sauce.
  3. Grill the chicken whilst preparing vegetables.
  4. Cut and prepare your fresh vegetables
    • Slice mange tout into thin strips
    • Remove broccoli stems and cut heads into smaller chunks
    • Shred carrots into matchsticks
    • Slice the red chilli into either long thin strips or into smaller circular pieces
  5. Remove noodles from the heat and drain well. Toss and drizzle with sesame oil.
  6. With chicken slightly charred or how preferred, remove and shred.
  7. Add the toasted sesame seeds and shredded cooked chicken to the noodles.
  8. Serve with a dash of soy sauce!
