Brazil is renowned for many things, samba, world class footballers, the Amazon rainforest, Carnival and of course much much more.

What is often overlooked this side of the planet is the unbelievable cuisine coming out of the South American nation.

But we’re here to change that with our Dishes around the World series, and our focus this time is the incredibly rich and tasty Brazilian cheese bread or Pão de Queijo.

Amazingly crispy on the outside, but even more amazingly soft, cheesy and chewy on the inside, pão de queijo is just an incredible dish out of the Minas Gerais region of Brazil.

Eaten commonly as a snack, breakfast food or meal accompaniment, pão de queijo is versatile but ultimately it’s not like ‘bread’ you’re used to.

If you’ve never had it before, then it’s texture is very similar to that of a cream puff shell, but with more of a substance on the inside. A crispy brown outside, with an airy, cheesy, chewy inside. The perfect combination if you ask us!

You’ll find traditional Brazilian cheese bread at a plethora of Brazilian restaurants, but there isn’t quite anything as good as the homemade classic straight from the oven.

Ingredients

  • Oil or butter for greasing
  • 250ml full-fat/whole milk
  • ½ x 250g unsalted butter
  • 1 tsp salt
  • 300g tapioca flour
  • 2 eggs
  • 100 grated parmesan

Method

  1. Heat the oven to 220°C/200°C fan/gas 7.
  2. Grease a baking sheet with oil or butter and set aside.
  3. In a medium saucepan add the milk, butter and salt and bring to a boil.
  4. Remove from heat and add the tapioca flour. Stir it vigorously and let cool a little.
  5. Pour the dough into a standing mixer or use a bowl and an electric hand whisk.
  6. Beat the dough until its cool.
  7. Beat the eggs in one at a time waiting until each one is completely incorporated before adding the next. When the dough is glossy and mixed add in the cheese. Beat again until mixed.
  8. Spoon the dough onto the baking sheet in 1 tbsp balls, 5cm apart.
  9. Bake for 30 mins until crisp and golden.
  10. Remove from the oven and eat while still warm.

It’s as simple as that. Or so we say. Try adjusting the cheese used to create your own perfect cheesy, chewy bread.

Unfortunately they don’t reheat so well, so we recommend that you eat them all in one sitting…
