How to make scones

As British as bulldogs and the Beatles, warm scones with clotted cream and jam are the ultimate comfort food and even perfect as part of a summer picnic.

They are equally perfect with afternoon tea or eaten in the garden, why aren’t you rushing to the kitchen already?!

We have a nice simple scone making recipe for you to try!

Ingredients

  • 250g plain flour
  • 22 teaspoons baking powder
  • 3 tablespoons golden caster sugar
  • 40g softened, unsalted butter
  • 100g sultanas or other dried fruit (optional)
  • 1 egg
  • 75g buttermilk

Method

Preheat the oven to 2200C/gas mark 7/2000C fan oven and grease and line a baking tray. Add the flour, baking powder, sugar and butter to a large bowl and rub together using your fingertips until the mixture resembles breadcrumbs. If you are using dried fruits, add them at this stage.

Beat the egg with the buttermilk and stir into the dough with a round bladed knife. Flour your hands to avoid the dough sticking and then use them to form the dough into a ball. If the mixture seems dry, add a little more buttermilk.

Sprinkle some flour onto a clean work surface and use your hand to flatten the dough ball to a thickness of about 4cm.

Cut out the scone shapes using a 5cm cutter. Flour the cutter first to avoid sticking and try to cut cleanly, without twisting.

Place the scones onto the baking tray, evenly spread apart.

Glaze the tops with buttermilk and sprinkle with a little golden caster sugar.

Bake the scones for about 15-20 minutes. They should be well-risen and golden brown on top.

Allow to cool for a few minutes on a wire rack before splitting and serving with clotted cream and jam.
