It’s a bonfire night must have.

Gathered round a toasty fire with the family, a perfect dessert after a stodgy pie and peas (mint sauce of course!)

Good old fashioned Yorkshire Parkin:

  • 350g medium oatmeal
  • 175g self raising flour
  • 2 tsp ground ginger
  • 175g soft brown sugar
  • 175g butter
  • 250g golden syrup
  • 50g black treacle
  • 2 eggs
  • 110ml milk

Pre heat the oven to a cool gas mark 2.

Line a small but deep tray or bread tin with greaseproof paper.

In to a bowl, chuck in your oatmeal flour and ginger.

Melt the sugar, butter, syrup and treacle in a saucepan over a low heat, stirring as you go.

Once the mixture is fully dissolved combine the sauce pan into the flour and oats add in the eggs and the milk and stir well.

Pour into your baking tray and bake for 45 minutes, until golden brown but still sticky on top.

Reduce the oven to gas mark 1 and bake for another 30 mins.

For best results allow to cool and wrap, store for a few days but if in doubt dig in whilst it’s still a bit warm!
