Perfect spicy barbecue pork ribs

SPICY bbq PORK ribs
With the weather being just a little bit predictably British over the past few weeks – including the bank holiday! – the idea of cooking some proper barbecue ribs may be at the back of most people’s minds – we imagine that the weekend has been filled with internal debates such as “should I brave the wind and rain and buy that inflatable dinghy?”

But now the wet weather has all but dissapated, and passed us all by with a degree of calm setting in, the sun has reappeared. It’s almost as if it is summer once again.

So in some sort of sun dance-style celebration, we’re going to light up that grill and cook some good old-fashioned pork ribs. But these aren’t just any ribs; extra sticky and garnished with some peppers, you’ll be getting a couple of not-so subtle kicks – hopefully of the good kind – to go alongside some great flavours.

Ingredients

  • 1 large rack of pork ribs
  • 2 jalapenos, diced
  • 2 (Sweet/Bell) peppers, diced
  • BBQ sauce
  • 3 tablespoons of diced red onion
  • 2 tablespoons of honey
  • 2 cans of beer
  • Sesame seeds
  • Plum sauce

Ribs

Method

  • Mix together the BBQ sauce, plum sauce and honey – add some hot water if necessary
  • Lay the pork ribs onto a sheet pan and then liberally base them with the sauce
  • Allow the ribs to sit for 30 minutes
  • Pour the beer over the ribs.
  • Turn the barbecue on to a medium heat and place the sheet pan on the grill. Close the lid.
  • Cook for 20 minutes, then turn the ribs over and cook for a further 20 minutes.
  • Baste the ribs with some of the remaining sauce.
  • Remove the sheet pan and grill for another 10 minutes per side.
  • Let the ribs rest, pour over the rest of the sauce and garnish with the peppers and onions.
