One pot cooking makes life simple, both by minimising time spent washing up and by offering flavoursome, healthy and complete meals perfect for sharing.

Serve straight from stove to table in an attractive pot and consider a simple salad or some crusty bread to add interest.

Pork and Potato Pot

  • 750g new potatoes, sliced
  • 500g plum tomatoes, halved
  • 3-4 sprigs fresh rosemary
  • 2 garlic cloves, chopped
  • 4 pork chops or steaks

Preheat the oven to 2000C and drizzle the base of a shallow, ovenproof dish with a little olive oil.

Arrange the potatoes and tomatoes in rows in the bottom of the dish and sprinkle over half of the rosemary and garlic, some salt and pepper and a little more olive oil.

Bake for 30 minutes then place the pork on top of the vegetables.

Add the remaining rosemary and garlic and some more salt and pepper and bake for another 35-45 minutes, until the meat and vegetables are tender.

Seafood Pasta

  • 1 onion, chopped
  • 1 garlic clove, chopped
  • 1 teaspoon paprika
  • 400g tin chopped tomatoes
  • 1 litre chicken stock
  • 300g spaghetti
  • 240g mixed seafood, defrosted

Heat a little olive oil in a large pan and cook the onion and garlic over a medium heat for five minutes, until soft.

Add the paprika, tomatoes and stock and bring to the boil.

Stir in the pasta and simmer for seven minutes, stirring occasionally.

Add the seafood and cook for three minutes or until heated through.

Season and serve with lemon wedges and sprinkled with parsley.
