Welsh Rarebit

With autumn comes a craving for comfort food the stodgy sort of thing eaten for supper by children.

There’s nothing quite as comforting as this adult version of cheese on toast.

Serve for lunch with a cup of real hot chocolate to take the chill off a cold day.

Quantities serve four.

Welsh rarebit

  • 50g butter
  • 3 tablespoons flour
  • 125ml beer
  • 1 teaspoon Dijon mustard
  • Splash of Worcestershire sauce
  • 200g good quality Cheddar cheese
  • 4 chunky slices of rustic bread

Turn the grill on to a medium heat.

Melt the butter in a small pan and add the flour to make a roux, cooking for 1-2 minutes.

Add the beer gradually, mixing well to combine. Remove from the heat and add the mustard, Worcestershire sauce and half of the cheese.

Beat together well until the cheese has melted and allow to cool slightly.

Toast the bread until turning golden on each side and place on a baking sheet.

Pour the cheese mixture over carefully and spread so each slice has an even covering.

Top with the rest of the cheese, another splash of Worcestershire sauce and season to taste.

Grill until bubbling and golden on top.

Hot chocolate

  • 1 vanilla pod
  • 1 cinnamon stick
  • 1 litre whole milk
  • 150g good quality dark chocolate, in small chunks

Place the vanilla pod, split and with the seeds scraped out, cinnamon and milk in a saucepan and bring to the boil.

Remove from the heat and stir in the chocolate keep stirring until it melts.

Whisk vigorously so the top froths over and serve with sugar to taste and sprinkled with nutmeg.
