These couldn’t be quicker or easier to make and any left overs make a fantastic breakfast with a few strawberries!
Ingredients (makes aprox 8)
- 1 cup all-purpose flour
- 2 Tbsp granulated sugar
- 3 tsp ground cinnamon
- 1 tsp baking powder
- 1 tsp baking soda
- ⅛ tsp salt
Mix together all the above ingredients in a bowl and put to one side, in a separate bowl mix:
- 1¼ cups buttermilk, shaken
- 1 large egg
- 1 Tbsp unsalted butter, melted and cooled
Beat the wet mixture in to the flour until batter completely smooth.
Pre-heat a skillet and add a splodge of oil.
Using a ladle dole out your pancakes, any shape and size is completely your preference, cook for 2-3 minutes and then flip until both side golden brown.
To serve add a drizzle of syrup or chocolate sauce and a dusting icing sugar.
